Homemade Apple Pie Crumble Cookie with maple glaze

These soft spiced cookies are so delicious and such a fun spin on your traditional fall baking.
Servings 32 cookies

Ingredients
  

  • 1 Cup softened butter
  • 3/4 Cup 1/3 Cup brown sugar divided
  • 3 Eggs
  • 1 Tbsp vanilla extract
  • 1/2 Cup buttermilk
  • 1 1/4 tsp salt divided
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 3 1/3 Cups all purpose flour
  • 1/2 Cup chopped dried apples
  • 1/3 Cup rolled oats
  • 1 Cup powdered sugar
  • 1 tsp maple syrup
  • 1 Tbsp heavy cream

Instructions
 

  • Gather all ingredients
  • Preheat oven to 350
  • Mix dry ingredients together in a bowl (flour, salt, spices, baking powder, baking soda)
  • Cream together butter and brown sugar until light and fluffy
  • Add eggs, one at a time mixing well between each addition
  • Add 1 Tablespoon of vanilla extract
  • Add half of the dry ingredients into the creamed mixture
  • Add half of the buttermilk
  • Add the second half of the dry ingredients
  • Mix in the last of the buttermilk
  • Take out 1/3 Cup scoop of this cookie dough mixture and add it into a bowl with your crumble ingredients (1/3 Cup each of brown sugar, flour, and oats)
  • Mix the crumble ingredients until it resembles a nice crumbly consistency and set aside.
  • Add the crushed or chopped apple pieces to your cookie dough mixture and mix by hand to incorporate. Do not over mix the batter.
  • Use a cookie scoop to scoop your cookie dough onto cookie sheets leaving 2 inches between each cookie for spread.
  • Add a good amount of crumble mixture to the top of each cookie (about a heaping Tablespoon)
  • Place in the preheated oven at 350 for 13-15 minutes or until golden brown
  • As the cookies cool, mix together the powdered sugar and maple syrup and heavy cream to make glaze. You want a medium thickness.
  • Once cookies are cooled, you will drizzle the glaze over them.
